豆浆与豆汁的区别
The difference between soy milk and soy juice
 
1、制作原料不同
1. Different raw materials
豆汁与豆浆的制作原料有所不同,豆浆是黄豆所制成的,而豆汁则是由绿豆所制成的,在制作绿豆粉条或是粉团的时候剩下的一种液态经过发酵而成。
The raw materials of soy juice and soy milk are different. Soy milk is made from soybeans, while soy juice is made from mung beans. When making mung bean noodles or noodles, the remaining liquid is fermented.
2、色泽口感不同

豆浆是乳白色或是淡黄色的液体,豆汁色泽呈现灰绿色,豆浆有豆香之气,芳香而醇厚,饮用时顺滑爽口,豆汁闻起来有轻微酸臭味,饮用时口感较为苦涩。
Soy milk is milky white or light yellow liquid. The color of soy juice is gray-green. Soy milk has a soy aroma, is aromatic and mellow. It is smooth and refreshing when drinking. Soy juice smells slightly sour and has a bitter taste when drinking.
3、营养价值不同

豆浆中含有丰富的植物蛋白、维生素、磷脂以及钙物质,尤其钙含量要比其他乳类高很多,经常食用有预防高血脂、高血压的作用。豆汁含有维生素C、粗纤维以及糖类,夏季饮用豆汁可有解暑消渴的作用。
Soy milk is rich in plant protein, vitamins, phospholipids and calcium substances, especially the calcium content is much higher than other dairy products. Regular consumption can prevent high blood fat and high blood pressure. Soy juice contains vitamin C, crude fiber and sugars. Drinking soy juice in summer can relieve heat and reduce thirst.
4、制作方法不同

豆浆是将黄豆用水浸泡后,通过磨碎、过滤以及煮沸等工艺制作而成,而豆汁是用绿豆作为原料,经过烫豆、磨豆工艺使其淀粉分离后期发酵制作而成。
Soy milk is made by soaking soybeans in water, then grinding, filtering, and boiling. Soy milk is made by using mung beans as raw materials and fermenting the starch after blanching and grinding beans.
