如果土豆已发芽或变色,食用时一定要把皮去干净,将芽眼周围挖掉,然后把切好的土豆放到水里浸泡2个小时以上再加工,炒熟煮透。发芽面积大、芽眼多的土豆最好丢弃不用。另外龙葵碱遇酸易分解,所以烹调时可加些食醋,加速对龙葵碱的破坏。
